To ensure the highest quality product, we select regionally appropriate grain varieties known for their dynamic flavor profiles, and then watch as our growers and millers carefully steward the transformation from seed to flour. The flavor develops uniquely for each seed as it interacts with the soil, the environment, and the hands that raise it.
